From a date to a drink
ZOARA DISTILLERY is an Israeli craft spirits distillery unlike any other – built on a single, ancient raw material: the Medjool date. We distill the dates into a smooth, aromatic eau de vie – carrying its natural notes of cocoa, caramel, and vanilla – then infuse it with botanicals foraged from Israel’s Jordan Valley to create spirits that taste like exactly where they come from.
Some ingredients carry history within them. The Medjool date is one of them.
The Bible speaks of this land – the Jordan River Valley, from the Sea of Galilee to the Dead Sea – as a place of abundance, of palm trees and flowing water. For thousands of years, the Medjool date was the most celebrated fruit of the Holy Land, woven into its culture, cuisine, and daily life.
ZOARA is the Latin name for Zoar – an ancient biblical city near the Dead Sea, once known as the City of Dates. Here, people fermented dates into alcohol – a tradition that vanished nearly 2,000 years ago. Today, we are bringing it back to life by reviving ancient craft in a modern world.
